Serves 10 guests

For the Clementine Syrup (makes 750ml)

300ml newly squeezed clementine juice
200ml fresh lemon juice
500g granulated sugar

Ingredients for the Cocktail (yields 850ml, to serve 10)

400ml good quality vodka
100ml London dry gin
150ml peach schnapps
200ml citrus syrup (from the recipe above)
Whole cranberries, to garnish
Mandarin essential oil, to finish

Directions

For the Cordial: Put the listed items inside a saucepan, bring to a light boil, stirring until the sugar dissolves. After that, turn off the burner allowing it to reach room temperature entirely. Transfer into a sterilised bottle, close it keeping it chilled, it can be stored for up to a month.

For the Cocktail Base: Combine all the liquid ingredients into one sizeable container, leave to sit for 60 minutes, then filter it best through cheesecloth, making it completely strained.

When ready to serve: Measure 85ml of your premix to a cocktail shaker packed with ice, and agitate lightly for a minute to cool it down. Pour into a chilled martini glass or a similar vessel, garnish with a few cranberries and complete it with a quick spritz with the mandarin essence over the top.
